Mast-o Khiar (Yogurt with cucumbers)

From our June 2010 cooking group.

  • 1 quart plain Greek-style yogurt (if you can’t find Greek, regular is OK)
  • 3 Tbsp dried mint or 1/2 cup fresh mint
  • Salt and pepper to taste
  • Cucumber, grated

If using regular yogurt, drain for half an hour or until desired thickness. The easiest way to do this is to put the yogurt in a coffee filter which you’ve placed in a Melita-style coffee cone or in a colander, and place over a bowl to drain.

After cucumbers are grated, they should also be drained. You can use the same draining method as with the yogurt if you have time( 3 to 4 hours), or you can put the cucumber in layers of paper towel and gently press to remove the liquid.

Combine all well-drained ingredients and let stand for at least 2 hours or more, for up to a day.
